Does this come with both large and small bore adaptors?

It does not come with adaptors. It just has the "small bore" size.

Does this gauge work on a schrader valve? A schrader valve is like a car or bike tire tube. I would be using it to measure the pressure on my nose gear strut which calls for 250-275 psi of Nitrogen.

Yes this will work with a Schrader valve.
